Cinnamon Whole Wheat Waffles

These Cinnamon Whole Wheat Waffles are crispy on the outside, and light and moist on the inside. In other words, just the perfect waffle! They are lightly flavored with cinnamon and molasses but not so overpowering that you can top these bad boys with anything you like. My favorite is fresh peaches and cream, but just plain boring maple syrup still hits the spot with these waffles. I uses half whole wheat flour and all purpose flour for a perfect balance of texture, add in some ground flax seed to the mix, and it ups the nutrition value! That’s a win-win breakfast in my book!

Cinnamon Whole Wheat Waffles

This is the perfect weekend breakfast, its easy to make, but tastes like you have slaved in the kitchen all morning.

Equipment

  • 1 Belgian Waffle Iron

Ingredients
  

  • 2 cups All Purpose Flour
  • 2 cups Whole Wheat Flour
  • 1 tsp Salt
  • 2 tsp cinnamon
  • 4 tsp baking powder
  • 2 ½ tsp Baking Soda
  • 2 ¾ cup Buttermilk
  • cup molasses
  • ¼-½ cup milk
  • 2 tbsp ground flax seed
  • 3 eggs
  • 6 tbsp butter melted, and room temperature

Instructions
 

  • In a large bowl, mix all dry ingredients together except flax seed.
  • Combine buttermilk, molasses, eggs, ground flax seed and melted butter in separate bowl. Whisk until eggs have thoroughly combined.
  • Make a well in the center of the dry ingredients and add the milk mixture all at once. Start to fold ingredients together, if batter seems too dry, add regular milk a little at a time until you have a desired consistency.
  • Stir just until all ingredients are combined, and let rest a few minutes before pouring into the hot waffle iron. (At this point your batter should be thick with lots of air bubbles) Do not stir! Just scoop and dump onto waffle iron.
  • Let Waffles cook until you can no longer see steam escape the side of the waffle.
  • Serve right away with fresh fruit, cream, maple syrup or any other toppings you can dream up!

This is one of my most requested recipes, and definitely deserves the attention. Nothing but good stuff in here, so pile your plate high, I mean overload it!!! This is one healthy dinner that you will go back for seconds.

The tender, marinated beef seems to want to steal the show in this salad, but I think veggies and the crunch of almonds and ramen noodles are an amazing combination.

The dressing is kept light and balanced with Asian flavors, its just so good! Just a note though: Do Not dress your salad with the dressing until right before serving! The rice vinegar in it will cause the lettuce to wilt, and no one wants to eat a limp salad! So right before you are ready to eat, grab a big bowl and toss (with just the amount of salad you can eat) with the dressing and then serve. Healthy dinner DONE!

Oriental Beef Salad

Full of Asian flavors, this salad is tantalizing on the tongue. The beef keeps the salad filling, and the crunchy veggies and nuts add great texture. Its a full meal in itself!

Ingredients
  

Beef Marinade

  • ½ cup water
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tsp sugar
  • 1 flavor pack from ramen noodles
  • 1 tsp beef boullion
  • 1 tsp garlic powder

Salad

  • pounds beef flank steak sliced thinly
  • 1 head iceberg lettuce chopped
  • 1 cup celery sliced
  • 1 cup purple cabbage shredded
  • 4 green onions sliced
  • 1 cup carrots sliced
  • 1 cup cucumber sliced
  • ½ cup slivered almonds
  • 1 pkg beef flavored ramen noodles crumbled
  • 2 tbsp sesame seeds toasted

Dressing

  • ¼ cup sugar
  • ¼ cup salad oil
  • ¼ cup rice vinegar
  • 1 tsp kosher salt
  • ¼ tsp ground ginger
  • ¼ tsp pepper

Instructions
 

  • Trim and slice beef into thin strips. Be sure to cut against the grain for a more tender meat. HINT: you can freeze your meat for an hour before slicing to make it easier to cut thinly.

  • Mix together marinade ingredients, and add beef slices. Place in the refridgerator for 2 hours up to 24 hours.

  • Prepare all your vegetables for the salad and place in a very large bowl.

  • Once veggies are ready to go, drain the meat from the marinade. Heat a frying pan to Med high heat and add 1 tbsp oil. Divide the meat into two batches, and fry until browned and the juices evaporate and create a sauce around the meat. Transfer to a plate to cool to room temperature. ***Be sure to let meat cool before adding to salad so you do not wilt the lettuce.***

  • Whisk dressing ingredients together until sugar is dissolved. Dress your salad right before serving and sprinkle with ramen noodles, almonds and sesame seeds. Enjoy and pat yourself on the back for making such a healthy, yet delicious dinner!
